Hey guys! Welcome back to the blog! I hope you're doing well! For this week's blog post, I'm sharing one of my favorite healthy snacks and desserts. I have a sweet tooth, and all my sweet tooths (and even those who don't have a sweet tooth) will absolutely love this snack!!! These tasty little bites are my go-to afternoon snack when I need a pick-me-up that's healthy but is still a little sweet. I created this recipe during the quarantine when I really got into baking and trying out different recipes, and it has become one of my favorites! With just three main ingredients that you likely have on hand, they are so easy to make! They literally take 5 minutes to make :) See below for the ingredients and instructions!!
3 Ingredient Banana, Oatmeal, Chocolate Chip Bites
Ingredients:
2 ripe bananas, mashed
2 cups rolled oats (I love the ones from Red Mill)
1/2 cup semi-sweet chocolate chips (The ones from Nestle Toll House are my fave)
1/3 cup chopped nuts (I like cashews)
Instructions:
Mash the bananas in a medium bowl until smooth and free of any chunks.
Add the oats and chocolate chips, stirring to incorporate fully.
Fold in the nuts.
Using a tablespoon or small cookie scoop, form the mixture into bite-sized rounds and place on a parchment-lined baking sheet.
Air fry at 350°F for 10 minutes.
Let cool before enjoying.
These tasty bites store well in the fridge for a few days, so I often make a double batch and keep extras on hand for quick snacks. Their portability also makes them a tremendous energy-boosting treat for after-school/work snacks. The bananas add natural sweetness, the oats provide fiber to keep you full, and the chocolate chips satisfy any chocolate cravings. Nuts add crunch and protein. It's a perfect healthy cookie, delicious snack, and sweet treat all in one bite!
I hope you guys enjoy this snack! It's my absolute fave, and it's a perfect little treat for Thanksgiving coming up!
Thank you for reading, and remember the SCBE mindset: "Show up for YOU" today, and this week! ❤️
