Feeding myself nutrition-dense food always boosts my energy and makes me feel good. Eating healthy is taking care of my gut health, is giving me a better mood, is supporting my immunity and my muscles, my energy levels, bowel movements, and my general health. It's totally okay to consume foods you love, but it's extremely important to get in all those nutrients from the main food groups that your body needs to function! I'm taking protein, grains, veggies, fruit, and perhaps dairy. For this post, I'm sharing one of my favorite nutritious recipes packed with protein, vitamins, and fiber!
Stir fry veggie medley with tofu ingredients:
Tofu
Kale
Mushrooms
Brocolli
Zucchini
Bell Peppers (yellow, red, green, or all!)
Fresh parsley
Green onions
Fresh cut garlic
Olive oil
Black pepper
Parsley flakes
Garlic salt
Fresh lemon or lemon juice
First, you want to cut all of your vegetables. Wash and cut kale, mushrooms, broccoli, zucchini, and bell peppers. Then, cut your tofu into medium-sized square pieces. After, prepare your pan with oil, and mix in garlic salt, parsley flakes, and black pepper. For a little extra spice, feel free to add some red pepper for a kick! Then add your garlic and green onions and let them marinate in the oil for a couple of minutes. Add your tofu and mix it in with the oil base. Wait for the tofu to become a light brown color, and then add the kale followed by broccoli, zucchini, mushrooms, and then the bell peppers. Add a lid onto your pan and wait for about 10 minutes. Once the veggies cook and are soft and ready, top them off with some fresh lemon for a yummy taste and some fresh cut parsley!
